Vegan Tacos

Vegan Tacos
INGREDIENTS:
10 cups water or vegetable broth
2 cups dry pinto beans(rinsed for at least 2 hours)
2 cups onion
2 cups tomato
2 carrots
2 cups corn
1 big avocado
1 tsp salt
1 tbsp yeast
Splash of lemon juice
Corn tortillas
Siracha or any other spicy sauce
DIRECTIONS:
Bring water or broth to a boil and add beans and 1 cup of onion. Cook at medium heat for two hours. Remove from heat and add salt and yeast.
Heat a pan and add the corn tortillas. Let them heat until they are toasted. Chop the carrots and tomatoes and place them in the middle of the tortilla. Add the frijoles and some corn and onion. Dip inside guacamole and enjoy this mexican taste!! If you like spicy food add some tabasco or siracha to your tacos!! DELICIOUS!

 

FOR THE GUACAMOLE:

Smash the avocado and mix with 1 cup of tomato and 1/2 cup onion. Add a pinch of salt, a splash of lemon juice and to taste some cilantro(I don’t use cilantro cause they prefer it this way at home) and siracha (or any other spicy sauce)
