1 cup yellow cornmeal
2 tablespoons maple syrup
1 scoop chocolate plant-based protein
1 teaspoon vanilla extract
Pinch of salt
Pinch of brown or coconut sugar
3/4 cup water
Preheat oven to 350f. Line a baking tray with parchment paper. In a bowl combine 3/4 cup cornmeal,maple syrup,vanilla,protein powder and salt. Whisk together until well incorporated.
Add water and stir well.Mixture should look like pancake batter. Spread batter as thinly as possible onto prepared baking sheet(the thinner the better).Bake for 10-15 minutes or until the batter looks dry and the surface is cracked. Remove from oven and reduce temperature to 300f. Peel from the parchment paper and tear the batter into little flakes. Bake another 40 minutes, until flakes are fully crisp. Remove from oven, add some oat milk and your fav toppings and enjoy🌾🥛Let the rest of the corn flakes cool completely before storing in an airtight container.
