INGREDIENTS:
- 1 pack of nasoya silken tofu(or any other tofu)
- 2 carrots
- 1 leek
- 1 tbsp coconut oil
- 1 tbsp sesame seeds
- Pinch of salt
- 2 gluten free bread slices (or normal breas)
- 2 tomatoes
- 1 tbsp olive oil
DIRECTIONS FOR THE TOFU:
Chop carrots and leek. Add coconut oil to a pan and when its hot add the carrots and the leek. When they are tender incorporate the tofu in little pieces(as if you were making scramble eggs). Mix in well and leave aside at the lowest heat for 5 minutes, remove from heat, add sesame seeds and ready to eat!!(you won’t need salt here as tofu is already salty.
FOR THE TOMATO:
Blend the tomatoes with the olive oil and a pinch of salt for 3 seconds, add the mix on top of a toasted bread slice, add the scrambled tofu and enjoy!!
