- 2 cups sushi rice
- 3 cups of water
- Nori seaweed
- 2 tbsp sushi vinegar(or white vinegar)
- 1 tbsp coconut sugar(or any other sugar:
- Pinch of salt
- 1 large avocado
- Plastic wrap paper
- Sushi rolling mat
FOR THE RISE:
Rinse rice until water runs clear. Soak rinsed rice in water for 30 minutes before cooking. Bring soaked rice to a boil. Cover and reduce heat to low simmer and cook for 20 minutes. Removed covered from heat and let steam 10 minutes. Rice will be sticky but thats the point ;)Change rice to a recipient(preferible not plastic) and pour rice dressing on top. Mix well and cover with plastic paper until rice is at room temperature.
Cover the rolling mat in plastic and place half of the nori seaweed on top. Put some rice on top and mix in a piece of the avocado. Press and roll with the mat as you would do when rolling a wrap inside out. Roll two or three times to make sure it is tighten. Finally cut with a knife into pieces. As rice is sticky I recommend to have water with a little vinegar by your side and wet the knife before every cut. Add tamari(or normal soy sauce)and a little wasabi and ENJOY!!
FOR THE RISE DRESSING:
Mix vinegar, sugar and salt. For the sugar to dissolve faster heat the mix in the microwave for 10 seconds.
